I found this recipe on a really great blog http://thestonesoup.com/blog. The Australian author, Jules Clancy, creates delicious minimalist recipes with 5 ingredients or less. The Lemon Meringue Pie is her late mom's recipe. The author's brother convinced their mom to make this pie for him for 21 days in a row as a birthday gift, so you know this has to be amazing.
My family loved it, it reminded me of summer. I will work on a lower calorie version, but this one was perfection. What I loved about this recipe was that you do not have to cook the filling, just mix and pour, this came together very quickly, especially since I used a store bought crust.
Lemon Meringue Perfection

1 store bought frozen pie crust
14 oz. can sweetened condensed milk
1/2 cup fresh squeezed lemon juice
Zest of one lemon
3 egg yolks
3 egg whites
1/4 cup sugar
1. Bake pie crust in 350°F oven, then cool completely.
2. Combine filling ingredients and add to cooled pie crust.
3. Beat egg whites until stiff peaks form, gradually add in sugar. Spread on top of filling forming peaks and spread to edges of crust to prevent shrinkage during baking.
4. Bake on 350°F oven for 15 minutes until meringue is golden.
